Hello,

I am trying to create a more useful root cause list as the current list appears stale. Where would I go to make these changes?

The root cause category list is a (predefined) ticket custom field as any other. You can remove it or alter its value list going to Configuration -> Ticket Content -> Ticket Custom Fields.
Under the Values Column click on "Show Values" then remove stale values with the '-' red icon and add new ones with the "+ Values" button.
